Now that Nikki Beach is in full-swing as Atlantic City's newest beachfront attraction, it's time to answer the obvious question: What do people like to drink while lounging under cabanas or on beach beds at the Sexiest Party On Earth? According to Sebastian Norena, VIP manager at the ultra-hip, ultra-high-end beach-oasis lounge, the customer preferences at the Atlantic City version of the famous playground for the affluent are much the same as has been the norm for the other eight locations in the Nikki Beach chain. For one thing, Nikki Beach customers can't get enough champagne. Three of the four most popular drinks at Nikki Beach Atlantic City are champagne concoctions. There is the Kir Royal, a mixture of champagne and Chambord wine. For a little vitamin C mixed with your champagne cocktail, you have either the Mimosa, a champagne/orange juice mixture; or Bellini, a mixture of champagne and peach liqueur. And, of course, the well-heeled will go for bottle service delivering a selection from a list of fine vintage champagnes. However, even with the well-documented preference for champagne by Nikki Beach customers, the most popular drink at the unique beach bar is not a champagne drink at all, but an exotic rum concoction known as the Cuban Mojito. For those seeking a refreshing splash with a substantial kick, this is one of the best choices of the many Caribbean-flavored cocktails one can find at any of the beach bars which now line the Boardwalk. Norena says it is the most popular libation of all who frequent Nikki Beach, from the rich and famous to the regular folk who come, dressed to kill, to revel in the luxurious atmosphere of this one-of-a-kind Boardwalk retreat. Check it out anytime. As Nikki Beach likes to say, the party starts every day at 10 a.m. and goes all night—well, at least until midnight Sunday through Thursday and until 2 a.m. Friday and Saturday. Cuban Mojito 1-1/2 oz. Bacardi Limón 4 lime wedges 1 tablespoon white sugar 6 mint leaves Splash of soda Muddle lines, sugar and mint in bottom of Pilsner glass. Fill glass with ice; add Bacardi Limón. Shake vigorously until lime and mint distribute; top with soda; garnish with lime wheel, mint leaves and stalk of sugar cane.
